Lunch doesn’t need to be complicated in order for it to be delicious! With just a couple core ingredients, along with some creativity, I whipped up these guilt-free chicken fajita melts that turned out fantastic!

The core ingredients I’m talking about are chicken, onions, peppers, garlic, cheese, and ghee. Sounds like the perfect combination for chicken fajitas if you ask me.
Preparation
First thing is first, we need to prep. That involves slicing the onions, cutting the peppers, slicing the garlic, and slicing the cheese!
Cooking The Chicken
The chicken is the base protein of this meal. I already had some diced chicken that was waiting to be used. Having core ingredients like this on hand helps with on-the-fly meals.
I cooked the chicken on medium heat for about 8 minutes while stirring it. Then after that, I added the peppers and onions over the chicken.

Chicken Fajitas Cooking
The onions and peppers take a shorter time to cook than the chicken. But you can add these at a time that suits your taste. So if you want them to be soft and mushy, add them earlier or cook them at the same time as the chicken. If you like them firmer and fresher, then add them later in the cook. I like mine somewhere in the middle.
Preparing The Cheese
The cheese for this meal is going to be a source of protein and fats. I happened to have a block of white Spanish cheese that I decided to slice and then grill on a lightly greased skillet.
Grilling the white cheese directly like this really softens it and brings out some of the oils contained in the cheese. It also gets this really terrific browning that definitely brings out a unique flavor.
I want to mention, that if you wanted to make this sandwich leaner, you can lighten or skip the cheese. But, the cheese really adds to the flavor, texture and enjoyment of the sandwich. As it wouldn’t be a “melt” without the cheese, it’s what brings everything together.
Grilling The Melt
The rest is just like making any other melt. Now that I have the bread on the skillet, with the cheese already grilled and placed, I slap on chicken fajitas in between and press the sandwich over the skillet. Take it off when the bread is toasted to taste!
Making The Plate
All that’s left to do is to put that on a plate and cut it in half! I like to cut my sandwich in half because you get to see all the delicious layers that you’re about to enjoy! What’s more satisfying than that?

For the side, I opted for something really healthy so I can offset the bread in the sandwich. For this lunch I simply sliced a tomato and topped it with salt, garlic, balsamic vinegar, cheese, and a little bit of olive oil. Now that this melt was paired with a responsible side, my lunch was ready to go!

The only thing left to do is to chow down!
